Vegan Ratatouille Recipe

Ingredients:

– 4 cloves of garlic
– 1 white onion
– 2 large carrots
– 2 large celery sticks
– 1 courgette
– 1 aubergine
– 2 red peppers (or any other coloured peppers)
– 2 tins of chopped tomatoes
– 1 tablespoon tomato puree
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1 tablespoon of olive oil (or oil of choice)

Method:

– Finely chop all of the ingredients.
– Add the oil, garlic, onion, salt and pepper to a large saucepan and fry until the onions are translucent.
– Stir in the tomato puree.
– Then add the carrots, courgette, aubergine, and celery slowly in that order.
– Stir in the tinned tomatoes and simmer on a low heat for 90 minutes.
– Serve with rice of choice, enjoy!
