The Best Gooey Vegan Brownies

Ingredients:

  • 2 tablespoon ground flaxseed
  • 6 tablespoon brewed coffee
  • 1 1/2 cup dark chocolate
  • 1 cup brown sugar
  • 6 tablespoon vegan butter
  • 1 teaspoon vanilla
  • 3/4 cup all purpose flour or use gluten-free all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup cocoa powder
Method:
  • Preheat the oven to 180C/350F. Line a small square tin with greaseproof paper.
  • Make your flax egg by mixing your ground flaxseed with your brewed (chilled) coffee and let it sit for 10 minutes, to thicken.
  • Melt one cup dark chocolate in the microwave or on the stovetop and set aside.
  • In a large mixing bowl, add your vegan butter and brown sugar, and whisk. Add in your flax mix, melted chocolate, vanilla, and mix well.
  • Add flour, baking powder, salt, and cocoa powder and fold until just combined. Do not overmix then fold in 1/2 cup dark chocolate cut into chunks.
  • Add brownie batter into your tin then sprinkle with salt. Bake for 27-30 minutes.
  • Remove brownies from the oven and let cool completely, before slicing into 6 pieces.
