Ingredients:
- 2 tablespoon ground flaxseed
- 6 tablespoon brewed coffee
- 1 1/2 cup dark chocolate
- 1 cup brown sugar
- 6 tablespoon vegan butter
- 1 teaspoon vanilla
- 3/4 cup all purpose flour or use gluten-free all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup cocoa powder
Method:
- Preheat the oven to 180C/350F. Line a small square tin with greaseproof paper.
- Make your flax egg by mixing your ground flaxseed with your brewed (chilled) coffee and let it sit for 10 minutes, to thicken.
- Melt one cup dark chocolate in the microwave or on the stovetop and set aside.
- In a large mixing bowl, add your vegan butter and brown sugar, and whisk. Add in your flax mix, melted chocolate, vanilla, and mix well.

Add flour, baking powder, salt, and cocoa powder and fold until just combined. Do not overmix then fold in 1/2 cup dark chocolate cut into chunks.

Add brownie batter into your tin then sprinkle with salt. Bake for 27-30 minutes.

Remove brownies from the oven and let cool completely, before slicing into 6 pieces.
