Ingredients:
– 1/2 cup coconut oil
– 2 garlic cloves (minced)
– 2 shallots (minced) OR 1/2 an onion finely chopped.
– 2 tbsp dried oregano OR herbs of choice
– 1/4 tsp black pepper
– 1 cup warm water
– 2 1/4 tsp instant yeast
– 1 tsp sugar
– 2 1/2 cups flour
– 2 tsp sea salt OR regular salt
Method:
– Add the oil, garlic, shallots, black pepper, salt and oregano to a sauce pan and simmer on a low heat for 5-10 minutes or until just before the garlic starts to brown.
– Then set aside the oil mixture to cool.
– In a large bowl, add the warm water and sprinkle over the instant yeast.
– Then add the sugar and whisk until the yeast has dissolved and set aside for 1 minute.
– Add 1 cup of flour and 1/4 cup of the oil mixture and stir until combined. Then leave it sit for 5 minutes.
– Then add the remaining flour and stir until it forms a rough dough.
– Transfer the dough to a lightly oiled bowl and roll the dough in the bowl until it is coated with the oil.
– Cover the bowl with a damp tea towel and let the dough rise for 30-45 minutes or until it has doubled in size.
– Pre heat your oven to 230 degrees celsius.
– Take the dough out of the bowl and knead a few times until the dough returns to its original size.
– In a non stick square baking tin, add 2 tbsps of the oil mixture and add the dough on top.
– Push the dough down with your fingers until it fits the size of the tin.
– Then pour the remaining oil mixture evenly over the top, cover with a tea towel and let it rise for another 30 minutes.
– Bake for 20-30 minutes or until golden brown.
